Thyme

Thyme is a perennial herb that has a very strong odor. Thyme is native to different areas of the world. These areas consist of Europe, Asia and North America. The stems of thyme are a narrow, and sometime wiry. The leaves are evergreen in most species of thyme, arranged in opposite pairs. The flowers are in dense terminal heads, with an uneven calyx that can be white, pink or purple in color. (Referenced http://en.wikipeida.org/wiki/thyme)  Thyme prefers a sandy, dry soil that is alkaline. Thyme grows best in a full sun area.

Thyme is widely used and cultivated as a herb, grown for its strong flavor. Thyme retains its flavor better than most other herbs that are dried. Thyme should be added early to foods while cooking due to the slow release of its oils. Thyme is used in some French dishes but used more readily in Caribbean dishes.

All the species of thyme are a source of nectar that honey bees use and collect.

As with most plants, thyme also has a history for being used for other things than cooking. During the Ancient Egyptian times, the Egyptians used thyme in embalming and the Greeks used it in their bath and burnt it as an incense in the temples, believing it was used as a source of courage
